    These bakery style apple muffins are the moistest and fluffiest Muffins. You will love them. They are quick and easy to make, and are perfect for breakfast, brunch or with your afternoon cup of tea. They are also extremely delicious with juicy ripe Plums!

    US Customary - Metric

    Ingredients

    • 2 egg yolks
    • 2 egg whites
    • Β½ cup sugar
    • ΒΌ cup unsalted butter - room temperature (Alternatively you can use sunflower oil)
    • 1 cup flour
    • 1 teaspoon baking powder
    • juice of half of lemon
    • Β½ cup milk
    • 2 - 3 apples, or plums - thinly sliced

    Instructions

    • Preheat oven to 325 Β°F
      1. With an electrical mixer beat the egg whites until stiff peaks form. Keep cool in the refrigerator.
      2. Peel, quarter and slice the apples.
      3. In a bowl add egg yolks and sugar. Cream with an electric mixer about 3 to 4 minutes, then add the softened butter. Mix until mixture becomes light and fluffy, about another 3 minutes.
      4. Add flour and baking powder. Lightly stir, then add the juice of half of a lemon. (You may use more if lemon is small) With the electric mixer on, slowly drizzle the milk to the batter, and mix until everything is combined. Go from a Stir mode to high speed, quickly. Don't overmix!
      5. Take out the stiffened egg whites from the refrigerator, and carefully fold it under the batter.
      6. Prepare either a standart 12 piece, or I like to use the 6 piece jumbo sized muffin tin with cupcake liners. Carefully spoon the muffin batter into the liners. Place the sliced apples, or plums on top of the batter. Sprinkle with a little cinnamon/sugar if you like.
      Bake for 25 to 30 minutes, or until when a skewer inserted in the middle comes out clean. Enjoy!
