    The best Strawberry Scones with white chocolate you will ever eat! If you are searching for the most buttery flaky scone recipe - look no further. This tried and true strawberry scone recipe has been tested many times with rave reviews, and has been a family favorite! My basic scone recipe works with any kind of fruit and additions such as chocolates and nuts.

    What is the secret for making perfect scones?

    • Use very cold real butter! If possible select a butter that has a high fat content like a European style butter. I like to use the Kerrygold brand the best. Also, I like to use salted butter, and ommit adding extra salt to the dough.
    • Heavy whipping cream is added for a higher fat content, but can be swapped out with buttermilk.
    • The most important tip to remember is that when mixing the dough - don't overdo it! Working quickly, mix until the dough just comes together. If you have a pastry cutter to mix in the butter with the flour, that will be ideal. We want to just barely break down the butter into little bits and pieces, just like making a pie crust. So, leave some small butter pieces in the dough!
    • Stir in the add-ons like fruit, chocolate and nuts after the butter has been added and worked into the dough, but before the liquids are added. That way you will coat the fruit with the flour/butter mixture nicely without squashing them. Mixing the fruit into the dough after will result in making the scones mushy!
    • Once you have shaped your dough into a disk, chill for at least 30 minutes, or pop it into the freezer. Cut into equal pieces, and bake spaced apart, in a preheated oven until golden brown. Again, that final chill relaxes the gluten which will yield a tender, flaky crumb.

    Ingredients

    • 2 cups all purpose flour
    • ⅓ cup sugar
    • 2 teaspoon baking powder
    • 8 tablespoon salted butter, very cold - cut into small cubes
    • 1 ¼ cup strawberries, cut into small pieces
    • ⅓ cup white chocolate chips (optional)
    • ¾ cup heavy cream
    • 2 teaspoon vanilla paste or extract
    • 1 egg
    • 2 tablespoon heavy cream - for basting
    • ½ cup white chocolate chips, melted for drizzle

    Instructions

    • Preheat oven to 400 ° F
      1. In a large bowl whisk together flour, baking powder, and sugar.
      2. Using a pastry cutter, or your hands, cut the butter into the flour mixture until the mixture resembles a coarse meal. We want to see small butter pieces in the dough. That will make the scones buttery/flaky.
      3. Add the strawberries, and ⅓ cup chocolate chips (if using) and coat with the flour/butter mixture.
      4. In a separate bowl, whisk together the heavy cream with the egg, and the vanilla extract. Then pour the cream mixture into the flour mixture and stir with a spoon until just combined.
      5. Turn dough out onto a lightly floured surface, knead lightly and form a disk about 7 inches across. Chill disk for at least 30 minutes. Cut into 8 wedges, and transfer them onto a parchment paper-lined baking sheet.
      6. Brush the top of the scones with 2 tablespoons of heavy cream. Bake until golden brown and baked through, about 25 to 30 minutes. Tip: Arrange the scones with space around them on the baking sheet for better browning.
      7. Allow scones to cool. Melt ⅓ cup of white chocolate and drizzle over the cooled scones. Enjoy!

    Notes

    Tip: Please don't use frozen or thawed fruit for this recipe. That will make the scones soggy!
    Spacing: Make sure to have enough space for the scones to brown evenly on all sides! Putting them close together will result in cakey scones.
    Storing: Scones are best when consumed on the same day, but will still be fresh on day 2 or 3 when stored in an airtight container.
